Yam & Jam Muffins

Two Thumbs Up on these muffins!

You need:
1 3/4 C all-purpose flour
1/3 C packed brown sugar
1 1/2 t baking powder
1/2 t baking soda
1 t apple pie spice or ground cinnamon
1/4 t salt
1/2 of a 17 oz can sweet potatoes, drained
1 egg, beaten
1/2 C milk
1/3 C fruit jam or preserves (I used apricot but can use strawberry, peach, etc)
1/4 C cooking oil

Preheat oven to 400 degrees.  Grease muffin pan.
In a large bowl, stir together flour, brown sugar, baking powder, baking soda, apple pie spice and salt.  Make a well in center of flour mixture; set aside.
In another bowl, mash the drained sweet potatoes with a fork.  Stir in egg, milk, jam and oil.  Add sweet potato mixture to the flour mixture and stir until just moistened.  Spoon batter into muffin pan.
Bake for 18 to 20 mins or until golden brown.  Let muffins cool for at least five minutes and enjoy!

These are a great low-fat muffin and the sweet potato adds Vitamin A.
