Chicken again?


Chicken again?  Sometimes, that is how I feel.  Not surprising since I don't eat beef.  But it is what it is and so I am always trying new recipes to keep chicken, pork and turkey from getting boring.  Want a chicken dish that is full of flavor?  But it has to be easy to make?  Kids need to eat it too (because who wants to make two meals?).  Well, if you don't mind eating your meat and fruit together, this is a fantastic recipe.

Apricot Chicken
Are you ready for the directions?  Pay attention, you don't want to miss a step, haha.  (I'm not kidding, this is super easy)

1.  Put chicken in your crockpot.
2. Mix one envelope of onion soup mix, 1 C of Catalina or French dressing and 1 1/2 C of apricot preserves.
3.  Pour over your chicken.
4.  Turn on the crockpot.  If your chicken is frozen, cook on low for 4-6 hours.  If your chicken is thawed, cook for 2 or 3 hours.

I plan to steam some broccoli to serve with this super yummy chicken.  (This is actually Andy's favorite meal)  If you are having company, this is a great meal to prepare and serve that will impress those around your table.  No one needs to know it took only 5 mins. to prepare ;)
