Overnight Honey Granola

There have been many requests for this recipe so I am going to repost this granola recipe. Enjoy! Let me know what you think.

1/2 C canola oil
2/3 C honey
1 teaspoon vanilla extract
1 Tablespoon ground cinnamon
5 C rolled oats, (for best results, combine quick cooking and old-fashioned)
1 C sliced almonds

Preheat oven to 300 degrees.
In a small bowl, whisk together the oil, honey, vanilla and cinnamon.
In a large bowl, combine the oats and sliced almonds.  Pour the honey mixture over the oat mixture.  Stir until evenly coated.
Spread mixture evenly in a thin single layer on 2 ungreased baking sheets.
Bake in the oven for 10 mins.  Turn off the oven and leave the granola in the oven overnight.
In the morning, remove the granola and store in air tight container.

My family LOVES this granola.  I make it every week.  We eat is as a cereal, over yogurt and sometimes just dry.  It is fresh and has no preservatives.  Enjoy!
